Before we discuss the ATAGO SugarMaster PR-32, we must clarify what a refractometer actually measures. This is the instrument’s biggest misconception: it does not measure sugar. It measures how much light bends — and interprets that angle as a sugar content via a predefined conversion table.

The Abbe principle: the physics behind the Brix reading

Light travels at different speeds in different media. From air (refractive index n=1.00) into pure water (n=1.33), the speed decreases and the light ray bends towards the normal according to Snell’s law. If you dissolve sugar in the water, the refractive index increases — a 10% sugar solution yields n=1.34, 20% yields n=1.36, and 30% yields n=1.38. The differences are small, but measurable with high precision.

Ernst Abbe (Zeiss optics, 1874) invented a refractometer design based on total internal reflection. Light passes from a prism (known refractive index n_prism) through a thin liquid film. At a certain angle — the critical angle — all light passes completely into the liquid; above this angle, all light is reflected back. This angle boundary is directly linked to the liquid’s refractive index, which in turn provides the sugar content via table lookup.

Classic Abbe refractometers have a prism glass that the operator lifts, drops a liquid droplet under, closes, looks through an eyepiece, and reads the boundary between the light and dark fields using a hair cross. Digital refractometers do the same thing — but measure the boundary with a photodiode line and convert it to Brix internally.

What does “% Brix” actually stand for?

Adolf Brix (German scientist, 1850s) defined the scale as the WEIGHT PERCENTAGE of sucrose dissolved in water. 15% Brix means 15 grams of sucrose per 100 grams of solution. The scale was originally only valid for pure sucrose solutions; for other substances (glucose, fructose, salts, acids), the refractometer provides an INDICATIVE value that is analogous to Brix but not entirely identical.

In practice, Brix is interpreted as “% dissolved solids” and it is the scale that the food industry and chemical industry have standardized on.

The 32% maximum value is the KEY — it is what the “ALPHA” model addresses. ATAGO also offers the PR series in PR-101 (0-45%), PR-201 (0-60%), and PR-301 (0-95%). Each model is calibrated for its specific range band; if you use the 32% model to measure 40% Brix, you will get measurement error or no reading at all.

Automatic temperature compensation — why it is needed

The refractive index varies with temperature. A 15% Brix solution at 20 °C has a different refractive index than the same solution at 30 °C. Classic refractometers require measuring at a known temperature and consulting a table for correction. The PR-32’s ATC circuit reads the liquid temperature simultaneously with the measurement and compensates automatically — the result is always displayed as “20 °C equivalent Brix” regardless of what the actual sample temperature was.

This is important for, e.g., QC measurement on cooked jam (60-70 °C), warm fruit juice (30-40 °C), or cold storage (5-10 °C). Without ATC, the operator must memorize the correction table or wait until the sample reaches room temperature.

0-32% Brix — which applications fall within this range?

Fruit juices and nectars: Orange juice 10-12%, apple juice 11-13%, grape juice 15-18%, cherry juice 20-25%. The PR-32 covers the entire normal range of the juice industry.

Beer and malt beverages: Wort before fermentation 10-16%, finished beer 1-4%, non-alcoholic beer 0.5-2%. The PR-32 is the standard instrument for homebrewers and small breweries.

Jam and marmalade: The boiling endpoint is typically determined at Brix 65-68% — here you need the PR-201 (0-60%) or higher. The PR-32 is not sufficient for jam boiling.

Soda: Coca-Cola approx. 10.5%, Fanta approx. 12%, tonic 8-9%. The PR-32 is perfect for soda QC.

Wine: Must (grape juice before fermentation) 18-25%, finished wine 0.5-3% (Brix then represents almost only glycerol and acids). The PR-32 works for both.

Cutting fluids and coolants (industrial): 3-10% typically. Here you are actually measuring oil concentration in water, but the refractometer reports it as “Brix equivalents”. The PR-32 is standard for workshop environments.

Windshield washer fluid: 15-25% winter concentration. The PR-32 is sufficient.

Dairy products: Milk 10-12%, yogurt 10-15%, condensed milk 25-30%. The PR-32 covers these.

What you should NOT buy the PR-32 for

  • Honey: 75-85% Brix. Requires PR-301 (0-95%).
  • Syrup: 65-85%. Requires PR-301.
  • Jam endpoint measurement: 65-68%. Requires PR-201 (0-60%) minimum.
  • Alcohol content in spirits: the refractometer measures TOTAL dissolved solids, not alcohol specifically. Use a densitometer or alcohol meter for spirit QC.
  • Pure sugar production (Brix in sugar factories): occurs at 15-72% depending on the stage. The PR-32 alone is not sufficient for the entire process.

Alternatives: analog versus digital

Classic Abbe refractometers with an eyepiece cost 1,200-2,500 SEK and require no battery. Advantages: no power supply needed, no sensor drift, robust construction without electronics. Disadvantages: operator-dependent reading (two people can read the same sample with a ±0.5% difference), no temperature compensation, the hair cross is faintly visible in low ambient light.

The PR-32’s digital reading eliminates operator dependence and provides ATC — the value is plus/minus 0.1% regardless of the operator. This is critical for QC applications where two shifts must produce the same measurement value on the same sample.
